Fixing Up Brownie Mix: Brownie Mix Cookies

Tonight is dessert night so I thought I’d find another way to mess around with a box of brownie mix. I found this recipe online (it’s in several places and I didn’t bookmark it, or I’d give credit) and while it’s simple enough it was hit or miss (I didn’t care for it but everyone else did).

They turned out a little too flat and crispy around the edges for me (I like my cookies thick and chewy), but the kids and Mike loved them, and as far as dessert night goes that’s all that matters! I did find another one online that I’m going to try later in the week.

I added white and chocolate chips to mine.

Brownie Mix Cookies

1 package of brownie mix
1 egg
2 Tb water
1/3 cup oil

Preheat the oven to 375 degrees. Mix the ingredients together and add chocolate chips or nuts if desired. Place on greased or parchment-lined cookie sheet and bake for 8 minutes.

This recipe made 27 cookies for me.
