Fixing Up Brownie Mix: Cream Cheese Brownies

Much to my family’s appreciation, I’ve got a lot of brownie mix sitting in my pantry. However, if I know them they’re going to get pretty bored with the same brownies for dessert night week after week (well, I would too), so for tonight’s dessert night I’m using one of my favorite add-ins: cream cheese.

Make the brownies to the package’s directions. I always add chopped walnuts to mine.

In a separate bowl, mix together one (room temperature) 8 oz package of cream cheese, one egg, one teaspoon vanilla extract, one tablespoon sugar, and two tablespoons of flour. It’ll be a little lumpy, but remember, those are cream cheese lumps.

Pour half of the brownie mixture into a greased pan. Spoon all of the cream cheese mixture on top.

Then cover with the rest of the brownie mix.

Using a knife or the end of a spoon, lightly swirl the cream cheese mixture up into the top layer of brownie batter. Don’t get too enthusiastic and mix too much or the effect will be lost:

Bake at 350° for about an hour (ten minutes or so longer than the package says). Let cool and serve.
