Easy Biscuits and Gravy

Like many families — or, more specifically, those who cook for said families! — I like to take the occasional break from the “bigger” meals now and then without having to compromise flavor. The only problem is, when my kids think “easy food,” they’re either picturing a trip down the street for burgers, or breakfast for dinner.

Since the former is rarely an option, I began playing around with breakfast for dinner ideas, and finally hit on good old biscuits and gravy.

But this is supposed to be an easy meal, right? This one is!

I have a weird love/hate relationship with food presentation. Though it looks fantastic, of course, I feel like spending extra time and energy to make something look just so when it’s going to be eaten in ten minutes flat is a waste. I’d rather get something on the plate that, while it’s not going to win any awards, is going to taste great and not make me dread making it.

That brings us to biscuits and gravy. I love them, my family loves them. But the thought of making biscuit dough, rolling it out, cutting out biscuits, re-rolling and re-cutting just doesn’t make sense to me, especially since it’s just going to be smothered in gravy anyway. And let’s not forget having to scrape the counter down after the dough has stuck and dried to it. Why do they have to be pretty little uniform circles? They don’t!

I found this recipe on AllRecipes for drop biscuits and gravy. The drop part is right up my alley since all you do is whip the biscuits up in a bowl, and plop them directly onto a baking sheet. And they’re delicious.

The recipe below is doubled from the original and fed the five of us perfectly. I also added a few little extras to make it more dinner-y (though of course it’s be just fine for breakfast too).

Biscuits:

2 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon onion powder
1 cup milk
2 teaspoons butter or margarine, melted

Gravy:

1 pound bulk pork sausage (I just use breakfast links, they crumble perfectly)
2 tablespoons butter or margarine
6 tablespoons all-purpose flour
3-1/2 cups milk
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon pepper

Heat oven to 450 degrees.

In a bowl, combine flour, baking powder, onion powder and salt. Combine milk and butter; stir into dry ingredients just until blended. Drop by rounded tablespoonfuls onto a greased baking sheet. Bake for 10-12 minutes or until golden brown.

Meanwhile, in a saucepan, cook the sausage over medium heat until no longer pink. Stir in butter until melted. Sprinkle with flour. Gradually stir in milk, garlic powder, salt and pepper. Bring to a boil; cook and stir for 2 minutes. Serve over biscuits.
