Homemade Whoopie Pies

The first time I made these Whoopie Pies, one of my girls called them cupcake top cookies, which is a very accurate observation. The cookie part does taste and feel exactly like the top of a cupcake, but it’s made even better sandwiched around a gooey filling.

These are so fast and easy to make, and are a ton of fun for kids of any age to help out with!

Whoopie Pies

Cookie:

2/3 c shortening
3/4 c sugar
1 egg
1 tsp vanilla
2-1/4 c flour
1 c Quik chocolate drink mix
1 tsp salt
1 tsp baking soda
1 c milk

Cream together shortening, sugar, egg and vanilla. Mix together flour, chocolate mix, salt and baking soda in a separate bowl, add to creamed mixture, then add milk. Add by tablespoonful to parchment covered baking sheet, bake at 400 degrees for 8 minutes.

Filling:

2 c powdered sugar
1 egg white*
1/2 c shortening
1 Tb butter
1 tsp vanilla extract
1 Tb flour
2 Tb milk

Mix together fast until light and fluffy. Assemble cookies.

Makes about 18 cookies.

*Although I know the chances of getting sick from it are extremely low, the first time I made these I didn’t feel comfortable using the raw egg white for the filling with young kids eating them. Instead I added a little bit more milk and it worked perfectly.
