Famous Oatmeal Cookies
Today I felt like baking, so I pulled out one of my favorite recipes, my mom’s Famous Oatmeal Cookies.
I’ve always got willing helpers!
I don’t know where the original recipe came from, but knowing my mom she’d probably had it for years. I remember helping her make them to take to sick friends or for potlucks at church.
I ended up using mini chocolate chips in this which worked out well since there aren’t big gobs of chocolate competing with the oatmeal. This also helps keep the dough from getting too crumbly.
Carol’s Famous Oatmeal Cookies
3/4 cup shortening
1 cup packed brown sugar
1/2 cup sugar
1 egg
1/4 cup water
1 tsp vanilla extract
3 cups oatmeal
1 cup flour
1 tsp salt
1/2 tsp baking soda
2 cups chocolate chipsMix shortening and sugars together until well-combined. Add egg, water and vanilla and mix well. Add baking soda, salt and oatmeal, mix again. Add flour until just combined, and mix in chocolate chips.
Bake at 350 degrees for 12-14 minutes.
They look delicious. I can see why they’re famous!

Thanks, Wendy! The recipe notes that you can add chopped walnuts or even peanuts to them. I’m not so sure about the peanuts 😀
